Spring planting season is upon us again. Today was the second day they were in the fields, trying to beat the rain that will be here by Saturday. The evenings are rather lonely once I finally get both babies down and take a break. As a farm wife you miss the winding down in the evenings with your husband. It’s only for so long though and I wouldn’t trade the farming life for anything in the world.
That also means dinners need to be easy things that are fast to make for on dinner on the go. Which I made then forgot to eat being busy with the girls. I figure why not share tonight’s recipe.
Healthy Green Chicken Salad
2 Cups cooked chicken cut into cubes or shredded
1 red bell pepper
3 stalks of celery
1/2 a cup of guacamole or mashed avocado ( I used pre-made that had some spice)
Mix it all together and serve in the wrap of your choice, on top of a salad, on bread, or a bun. For in the field I did wraps for my husband. Forgetting dinner I choose to put it over top of spinach. For lunch tomorrow I am defiantly going to try it on one of my egg white wraps.
